I don't think i have ever been to a restaurant and had a dish that was actually spicy. Even the "spiciest" items on most menus is nothing more than a slight tingle in my mouth.

I love spicy food but most of the time i can't find it unless i do it myself. Why can't i go out and have food that is actually spicy?

There are so many people that they have to appeal to. I am like you and I can handle things real spicy but a lot of people I know can't. I think restaurants also do not want to overpower all flavor by making it super spicy which can easily happen. When you order next time, ask the waiter if there is anyway they can make it spicier for you. I am sure most places can accomodate.

Most cooks know that it is easier to add heat than to reduce it. If a "spicy" dish is served and the customer wants it spicier, it is easy to add a few drops of hot sauce, or serve a side of spicy sauce to cater to that one customer. If the cook makes it too hot, there isn't much that can be done but to prepare a new meal.

There is a great little restaurant I go to in Cleveland that makes a jumbalaya that you'll feel inside of you for hours. The first time I ordered it, before they would serve me a plate that hot, they sent out to my table a little sample of it. They asked me to try it, and that if it was too hot, they would serve me a milder version of it for dinner. It was awesome! Brilliantly hot, yet still delicious. It would be nice if more restaurants took this approach, even though it is more work on the kitchen and the staff.

Easy - it's business economics. Making a food very spicy cuts down the number of people who will like it or be able to eat it. Everyone can eat non-spicy food, but only some people can tolerate extremely spicy foods. Making it too spicy may please a select few, but it also greatly reduces the amount of potential consumers. If you make it less spicy, more people can enjoy it. Usually, in business, you try to grow your customer base, not shrink it by making something most won't care for.

This just means that your heat tolorence is higher than most. I go to restaurants and get some mild things and feel like my mouth is on fire. Most restaurants don't go too crazy with the spice because they want you to taste everything, not just the spiciness of the dish. Plus, since not everyone has strong spice taste buds, as you apparently do, they don't want to have a lot of patrons not liking how spicey their foods are. They try to keep it on the mild side...but you could always request certain places to make something extra spicey for you when you place your order.

Well a couple things come to mind...
1. Most people can't tolerate spicy foods and restaurants still have to cater to a majority of the customers.
2. Maybe you're a chile-head, like me, where we can tolerate very spicy foods where our tolerance is above most people's capabilities. Most of the time I ask for extra chile sauce on the side just to suit my taste.

Well, restaurants generally have to make food for the masses -- and the masses generally cannot tolerate the hottest of hot foods. There are several restaurants in my city that I can readily think of that make foods that are incredibly spicy (and I can eat the spiciest of foods). Where are you? In San Francisco, one of the hottest dishes around is any Vindaloo at Naan & Curry. Also anything "hot" at King of Thai or Best of Thai will have you sweating.

Have you tried Indian food? Even the mild is way too spicy for me. Im a wimp, but I've been with spice lovers at Indian restaurants who were happy.

They do it like this because not ever one can eat spicy foods. Yes they could make spicy and mild but then their cost would go up. I usually take my habenero hot sauce with me so that I can spice it up myself!

I am from Louisiana so I am accustomed to spicy food and totally agree! I suppose they are afraid people will complain but if it says spicy...anything goes!

Amen! The only places I find that can cater to my need for spice are the best Wing Restaurants in the area like Anchor Bar.
