I serve salads with bread or vegetables with crackers & a spread, then the meal always has two vegetables (one up one down) one starch and one protein. Theres only so many green beans you can eat in a sitting. So two different color vegetables.

To me it's not "dinner" if I don't have a meat or fish, starch (potato, rice, noodles) and a vegetable or salad. (Sometimes we have both.) If I have spaghetti I definitely want a salad on the side. My salads usually include tomato and cucumber, which of course, are also vegetables.

I usually have two veggies at dinner time. Most nights it's a sweet potato along with some greens like spinach or broccoli rabe.

Most of the time, yes. Usually a salad. But my rice side dish has a bunch of veggies so I hope that counts.

Hello,
We eat either Rice or Tortillas at night. So, to go with them, we must have a vegetable stir fry curry. I usually prepare it with less oil. Including with that, once in a while we have sliced cucumbers and carrots.

Yes, always! Hubby, however, will only eat:
Corn
Green beans
Limas
Black-eyed peas
Pinto beans
So I'm limited -- I love EVERY type of veggie, but if I want & cook something he doesn't care for, I end up eating it for days!
