Canon Digital Rebel XT, which is also called the Digital Rebel 350D.
Very affordable, much more so than the newer XTi.
Save the money for the lenses, which is where you'll see the difference in the images.
This camera is not as sturdy or tough as the upper level Canons but it will get the job done if you're just starting out.

If you are a big fan of Canon, stick with the brand. Keep in mind the digital world changes drastically every six months, so it will always be changing for the better. A rule of thumb is the prices don't go down, but the features go up (more MP's, more features, better noise reduction, etc) for you $$$.
When you say "professional" it is like saying "doctor;" what kind of equipment you will need depends upon what your specialty requires. Once you settle in on a field in which to focus, then you will be better at making a logical decision. Check with active professionals in the area you choose and ask then what they use, it will help you with your decision as well.
Canon and Nikon are the two brands currently vying for professional business. Either will serve you well.

Have you completed at least two years of photography school?
Have you been working as an assistant to a professional photographer?
Do you know what "EV" is and when and how to use it?
Do you know what effect you'll get shooting the same subject at f2.8 and at f11?
Do you know all the Rules of Composition?
Do you know what to do - and how to do it - if your subject is backlit and you want detail in the subject instead of a silhouette?
Do you know what to do - and how to do it - if your subject is frontlit against a dark background and you want detail in your subject, not a blown-out highlight?
Unless you can answer these questions, you aren't ready to think about being a professional photographer. You'll get the same results with a DSLR that you're getting with a point and shoot digicam.

Canon 5D is your only real choice. It is the only affordable pro FF DSLR out there.
