I put onion, celery, rosemary and carrot on the cavity and also around the bird. I make little cuts into the bird and put in slivers of garlic. Salt, pepper and garlic powder on the bird. I put a little chicken stock in the roasting pan to keep it moist. I also put a lid on it for most of the roasting time and roast it breast side down to keep the white meat moist. Then about 20 minutes before it's done, I turn the bird breast side up and finish cooking with the lid off.

I make sure to dry the chicken so that the butter will stick
Rub approx two tablespoons butter on chicken, dust with flour, salt, pepper. I put half an onion, some fresh or dried whole sage and thyme into the cavity as well if I"m not stuffing the bird.
Another trick is to lay a few pieces of fatty bacon over the breast meat to keep it from drying out as well.

If I'm roasting a whole chicken, I'll put onions, garlic, and celery in the cavity with some olive oil, salt & pepper, perhaps some rosemary & parsley. On top, I'll just use salt & pepper.

I would brine the chicken in a salt, maple syrup, black pepper corns, Thyme, Bay leaf. let this brine for 24+ hours. Then I like to quarter an onion and lemon and shove inside the chicken. outside I like a Salt, Pepper, Fresh Thyme, and a bit of Cayenne pepper.

Chicken is like a blank palette. You can do Lemon pepper and salt.
Garlic
Crazy mixed up salt is great on it (If you can find it)
onion
rosemary
thyme
coriander
basil
any of the above.

make a paste of softened butter, rosemary, garlic powder, and onion powder. Smear it all over your chicken and under the skin before roasting....absolutely delicious!!

I put onions and fresh basil inside the cavity and salt, pepper and garlic powder on the outside. Cut the onions into quarters and stuff as much basil as you can get in it. This is wonderful.
