Any recommendations on whiskey? - I'm not a whiskey drinker. Otherwise - can Irish soft cheeses be carried internationally (to UK) and are Irish chocolates any good?

How about one of the Irish wool fisherman's sweaters (jersey's)? Irish chocolates are nothing special.

Jameson or Bushmills are good Irish whiskeys. Also you could pick up a set of Guinness glasses or other barware relatively cheaply.

Not sure about transporting food - if you're coming from N. Ireland it may be less of a problem than from the Republic. I'm not 100% on this part.

** Bailey's Irish Cream ....or just go to the liquor store and ask for some good Irish Whiskey for a Christmas present; usually the guys know their stuff

or you could bake at home to take with you:
Traditional Foods of Ireland
** Christmas Mince Pies
http://www.dochara.com/eat/traditional/mince-pies.php
put into a box with lacy paper doilies, gift wrap and tie ribbons
or
Irish Recipes and Baking
** Barm Brach
(a really nice bread with candied fruits, to have with butter or toast for breakfast)
{I could not get the exact spot, so if you go here by clicking onto the line of blue letters here in the answer, click on Recipes listed under Culture in the left hand margin} - a pretty gift for Christmas, wrapped and tied with ribbons..

for cheese:
iGourmet
http://www.igourmet.com/
type in search space: Irish cheese
and
type in search space: Irish chocolate
**the first thing you see on the screen is for more Irish cheese but scroll down and you will find chocolates
(I did not look further, try Jams, and try Honeys, etc....)

there is a liquor called st. brendan's irish cream that is comparable to bailey's irish cream, and a very popular whiskey in ireland is bushmill's irish whiskey. if they prefer beer or stout, guiness would be a good choice, though it has a very bold taste. i'm not able to answer your questions about irish cheeses or chocolates.
