What is the substance in potatoes that you can smell on your hands after peeling potatoes ?

Even after washing hands the smell is still there !

Dirt... that's all I smell after I peel potatoes.

Not positive, but I would think it is the starch that is so prevalent in potatoes, especially when raw.
