Recipe call for light brown sugar,I have dark brown.Can I use it?It is for shortbread cookies.Thanks.

brown sugar is a mixture of sugar and molasses

dark brown sugar simply has more molasses than light brown

to make it light brown, just add more white sugar to it

To Me It Does Noy Really Matter, Because Light Brown Sugar Is Just Like Dark Brown Sugar, Just Darker Thats all.

White suger is taken out of molasis, the brown or dark brown is in the more raw form, the darker the more raw.

Brown sugar contains from 3.5% molasses (light brown sugar) to 6.5% molasses (dark brown sugar)

You can use it, they will be darker in colour and a little more chewy.

The difference is the amount of liquid left in the sugar during processing.

They act the same in the recipe. Your cookies may turn out just a bit darker than they should be but they will taste the same.
