I always use grape juice - either red or white, according to what is called for. Tastes just fine (well, better, in my opinion!). But for beef roast you could also just use broth, maybe with some lemon juice.
Salams & happy cooking!

Advise of a frenchman :

If you use wine while cooking, the alcohol will go out of it after less than 15 min. So this is not against muslim religion.
Else, I can tell you what NOT to do :
Do not use fruit juice as suggested, it is too sugary and does not contain the tanin or aroma of the wine.
Do not use beer, it is different.
Do not use non-alcoholic wine, this is just crap, chemical mixture.
Do not use cooking wine, these are alcoholized and very bad quality

The less worst choice could be to prepare a mixture of 1/2 glass of wine vinegar (not balsamic, not white vinegar), 1 tea spoon of sugar and 1/2 glass of fruit juice. This will reconstruct a wine with natural ingredients. It will reconstruct part of the aromas of wine. You will need to cook this mixture with the meat for at least 20-30 min to remove the acidity of the vinegar.

Nothing really substitutes for the flavor of the wine (don't worry about the alcohol, that evaporates so the soup won't have any in it). You can use two cups of another liquid, but it will change the flavor. Broth (chicken, vegetable, beef or fish), beer, or water all work, depending on your preference. Vegetable broth or water is probably your best bet, if you don't want to change the flavor too much from the original recipe. If you need to "deglaze" the pan, use broth.

I don't know what the problem with your religion over wine but be assured that the alcohol cooks out and just leaves the flavor.

You know, the alcohol burns (evaporates) out when you use
cooking wines (they make special cooking wines- I think they
are in the mayonaisse isle) so loosen up.
