Uh...yes, that happened. It was Peter. Are you looking for the verse?
Mar 14:47 And one of them that stood by drew a sword, and smote a servant of the high priest, and cut off his ear.
Luk 22:50 And one of them smote the servant of the high priest, and cut off his right ear.
Jhn 18:10 Then Simon Peter having a sword drew it, and smote the high priest's servant, and cut off his right ear. The servant's name was Malchus.
Jhn 18:26 One of the servants of the high priest, being [his] kinsman whose ear Peter cut off, saith, Did not I see thee in the garden with him?

Yes, it was Peter who tried to prevent the guards to arrest Jesus. Jesus reprimand Peter for that and then cured the ear.
However,
* The injured man (Malchus) was not a roman soldier but a guard of the temple who served the jew's high priest (Mathew 26:51, Marcus 14:43-47, John18:10). It was the jews who paid Judas to betray Jesus and then arrested / judge Him. Later they went to the romans/Pilates to have Him judged again and crucified.
* The guards ofthe temple were jews, no gentiles (romans for example) were allowed at the temple.
* The arrest was made at the Mount of the Olives, specifically at the Garden of Getsemani. It is the first time I see the expresion of "forest", or "forest of Getsemani".

In the Garden of Gethsemane Peter cut off the soldier's ear, trying to protect Jesus from arrest. Jesus rebuked him, saying, "Put your sword into its sheath; shall I not drink the cup which the Father has given me?" (John 18:11). Even as our Lord began his ultimate suffering, Peter was still looking in the wrong direction.

John 19:26 1 of the servants of the high priest, a relative of him whose ear Peter cut off, said, "did I not see you in the garden W/Him?" so it was in Gethsemane not in the forest

The ear of a servant of the high priest, not Roman soldier.
Jesus put that ear back and healed it immediately.

Yes, the night of the betrayal of Jesus by Judas.
It was Peter, and the "sword" he used was nothing more than a shorter "sword" which was in all probability a fisherman's knife.

I am sure that someone will say it didn't happen. The ear was cut off and Jesus healed it. I think this story carries an important message. We should love our enemies and not try and do them physical harm.
