There is a listing of the more-than-30 member organizations of the International Volunteers Program Association (IVPA) that is a good place to find reputable volunteer-for-a-fee programs.

The fees you pay for these type of volunteer vacations in the developing world pay for your accommodations while there, food, security, supervision, materials and local transportation. Altogether, that would certain costs about $1000. The fees seem high but, quite frankly, it would be more affordable and efficient to hire LOCAL people to do these jobs, therefore, in addition to paying for all the aforementioned costs help fund jobs for local people trying to feed their families.
