I have done it both ways.I like to bake them first.Besure to wrap them good.
Here is a really good recipe.
Angel Biscuits


These biscuits are half way between a yeast roll and a baking powder
biscuit. They are quick to make and very tender.



ANGEL BISCUITS



5 cups all purpose flour

¼ cup sugar

1 Tbsp Baking Powder

1 pkg yeast

1 tsp Baking Soda

1 tsp salt

1 cup butter or shortening

2 cups buttermilk

¼ cup butter, melted



Mix dry ingredients. Cut in butter. Dissolve yeast in 2 Tbsp warm water. To
yeast, add buttermilk. Mix in all of the remaining ingredients, except the ¼
cup melted butter. Sprinkle board with flour. Knead the dough a few times to
make it soft but not sticky. Roll dough to ¼ inch thickness and cut with a
biscuit cutter. Dip biscuits in melted butter and fold over. Place close
together on cookie sheet. Let rise. (you can also make these without letting
the dough rise if you are in a hurry.) Bake at 400* for 15 minutes. Makes
about 40 biscuits.

A lady at my work also bakes professionally. She says that you can freeze it before it's baked but not after.

Don't thaw it in the microwave, let it thaw naturally. And then bake.

bake them first. Then freeze in packages of how many you like to use at a time.

pastry chef_g to the rescue!!!...you can freeze before of afTer baking...whichever is easiest for you...if you freeze them prior to baking them, thaw COMPLETELY at room temp before baking...if you bake them first, make sure you wrap them very well with saran so they don't absorb freezer odors or get freezer burn..GREAT QUESTION...good luck with your biscuits

I believe it is better to freeze the uncooked dough.
