You can just simply take her out for a very nice evening at a restaurant preferably one that takes a reservation! They should all have some vegetarian items. Call and ask, then take her to the movie or since you do that all the time, you could take her to a comedy club or tour the Christmas lights there are a lot of things to do this time of the year. Go out in public with her! Somewhere you need to dress nice to go. If that is to much for you just have some flowers delivered to her work place, girls love that!!!! Say something clever & sweet on the card. Ask her the night before, out to dinner for the next day and make reservations.
You can never go wrong with jewelry. I mean there is something for every occasion, it doesn't necessarily mean marriage or hard commitment. You can get something nice with her birthstone in it at Walmart like a bracelet or necklace.

Well, as a woman I can tell you that if she doesn't like chocolate then somethings wrong. LOL Just Kidding. Women love flowers, but some women don't like cut flowers because they don't stay pretty very long & they just die and dry up. The only thing you can do with them then is to press them as a momento. But I will tell you now, that I have thrown many dried up flower momentos away after a period of time. She might like a live potted plant of some sort, with a nice card. I like the idea of leaving it at her doorstep. I don't know if she travels and is gone a lot, but if she does you can always offer to water her plant for her. Whatever you decide, I wish you the best of luck. I don't know what I would do if I was the guy on the giving end. Fortunately, I'm a girl & I've always been on the receiving end of the 1st move.

I had a friend like that. I would write to her every so often and she would write back and do the whole, I'm such a bad friend thing and act like she was so glad to hear from me. So then I would reply, but not hear back. After a couple of years of this, I figured she didn't value our friendship enough to put any effort into it, so I stopped writing to her. I sent Christmas cards for a few years, but since she never sent one in return, I eventually stopped sending Christmas cards too. I figure it takes two people to make a friendship. Additional: Yes, she could be disorganized or bad at correspondence, but unless she is sending you letters on her own initiative once in a while, rather than reply to a letter you sent, I doubt that is the reason. We make the time to keep in touch with the people who are important to us. These days we have e-mail, texting, twitter, facebook, etc.

A inexpensive gift with a card expressing your true feelings will be enough. A card form Hallmark and a nice Heart shaped Crystal pennant to place on her neck or drape over a picture of yourself enjoying her company. The crystal can be bought at the Hallmark Store as well. You could send it to here at work so she will be asked by everyone seeing the delivery, Whats up with you!
