I compared recipes and some use yeast while others do not have any other leavening other than the steam from the butter.

Any professional bakers out there to give some advice?

Puff pastry dough (at least the classic dough that I make) does not have yeast in it. The leavening is caused by the butter between the hundreds of layers of dough.
But puff pastry is pretty labor intensive and takes a long time to make, so I usually buy it ready made and rarely make it myself anymore.
