I'd make soup with some just add veg and the meat some broth, maybe a can if diced tomato and pasta beef and noodles if you have any gravy left from roast (if not you can thicken some beef broth with corn starch) toss meat in with chili instead of ground beef season and use in place of ground beef for taco meat toss in with mac n cheese a can of pinto beans and 1/2 cup salsa dice potatoes and onion pan fry until taters are almost tender add meat shredded or cubed cook through, you've got hash, serve on toast maybe some white gravy on top If you have tons split into serving size and freeze to be added to meals another day it will keep about 4-6 months

Make hash.
Dice the pot roast into 1/2 cubes. Dice left over potatoes about the same size. Chop any remaining vegetables. Saute 1 cup of diced onion, add meat, potatoes and remaining vegetables. Add a little left over gravy to moisten. Heat through. Serve with cooked beets. Or serve at breakfast with eggs.

Shepherd's Pie is easy and delicious:

Dice the pot roast and any veggies that are left over. If you have that odd half cup of peas, corn, or green beans in the fridge, drain them well and toss them in, too.

Moisten with gravy or a little mushroom soup, and season lightly with a dash each of onion and garlic powder and Worchestershire sauce. (Mixture should be thick.)

Top with mashed potatoes, either homemade or from a box. (If using instant potatoes, use a little less water than the recipe calls for so that the potatoes are thick.) Bake at 350 degrees for 20 to 25 minutes or until potatoes start to brown.

Slice the pot roast up.

Add BBQ sauce.

Serve it on buns.

You can have the meat as sliced BBQ .. or chop it up for chopped BBQ.

OR .. a sandwich is great made of pot roast.

AND .. you can freeze left-overs - and have another already cooked meal for another day .. all you would have to do is put it in the microwave, or oven .. and it will still be delicious..

My first use for the pot roast and veggies, is chop the all together and mix with any gravy, pour into a pie shell, top with another pie pastry shell and bake it as a beef pot pie.....See how easy that was???? No recipe needed!!! The refrigerated rolled pie shells (think: Pillsbury) do just fine for this dish.....a green salad on the side and you're done....cooks @ 375F (Gas 4 in UK) in about an hour and 15 min......if you really want to dazzle 'em, brush the top with an egg wash (egg and milk or water, well mixed and brushed with a pastry brush on the top pie shell prior to baking)
Second use:

French Dip Sandwiches: slice cold roast beef, and let come to room temp......slice deli rolls (sub, grinder, hogie, whatever you call them in your locale) and serve with Au Jus (you can make do with the packaged stuff......) Add beef to horizontally sliced rolls, Micro for about 45 seconds and serve with horseradish and Au Jus......that simple......

Thinly slice the meat and make pot roast sandwiches. Chop up the pot roast and use it to make vegetable beef soup. Soup can be stored in the freezer so if you can't eat it all then freeze it in small containers. You can also use chopped up meat to make stir fry. Get a bunch of veggies (broccoli, onions, carrots and stir fry in teriyaki sauce until tender), add the pot roast and serve on a bed of rice and you have beef stir fry.

LEFTOVER ROAST BEEF SALAD

1 c. finely chopped roast beef
1/2 c. diced celery
1 green onion, minced
1/4 to 1/2 c. diced Cheddar, Swiss or Monterey Jack cheese
1/4 c. mayonnaise
2 tsp. sweet pickle relish or 1 sm. dill pickle, finely chopped
1/2 tsp. prepared horseradish (optional)
2 tbsp. catsup
1/4 tsp. salt
Few grains pepper

Mix all ingredients together. Serve on lettuce leaf or between bread slices

Thinly slice it and use it in a stir fry or put thin slices into a flour tortilla and grate some cheese on it and roll it up.
