Start by calling your priest.
Since Catholics consider matrimony to be a Sacrament, there are more "regulations" to follow and a more careful preparation of the couple to enter married life. It takes about 6 months, btw.
As far as "including both religions," since Catholics ARE Christian, there will be plenty of Jesus-centered stuff that should meet any requirements that your fiance might have. A protestant clergyperson is not allowed to co-officiate at a Catholic wedding, so if your fiance wants his pastor involved, it may have to be at the reception only. Consult your priest for details.
Your fiance should also ask his pastor what, if any, requirements exist in his church for marriage. Usually there are not many and what few there are already addressed in Catholic marriage prep systems.

The Catholic Church allows marriage between Catholics and non-Catholics.
Because the Church recognizes the tremendous challenge that the interfaith couple will face, they may have to get permission from the bishop.

oh for goodness sake how hard can it be. Catholics are Christian too. look up traditional ceremonies for both and figure it out. find a nice church there are non-denominational ones out there or shared ones and you can get a non-specific, yet religious service
