When you caramelize sugar, you just heat sugar on the stove. But do you add anything else (water, butter, etc.) or do I just wait for the sugar itself to melt over the heat?

The sugar will melt without anything added.

This is the best recipe. It works perfect just follow directions exactly. (easy) Use a good pan.
CARMELIZING SUGAR

Put 2 cups granulated sugar in a heavy skillet and heat, stirring constantly until sugar melts to a light amber-colored liquid. Watch carefully - a dark amber liquid has a scorched flavor. Carefully add 1-1/2 cups water and simmer until caramel dissolves, stirring frequently.

much much better if u wont add anything.
just pour the sugar in a thick saucepan then
put the stove in low fire then wait til it melts.
stir it occasionally so the sugar wont burn.

It can be done either way. I find a Tbsp or so of water speeds things along, and the water will cook out.

Just have a pasty brush and water handy so you can brush any granules off the sides of the pan.

You can add a little water but it isn't necessary.
