I am planning on making eclairs for Friday, could I make them Wednesday night? Do they need to be kept cold in the fridge?

I am using the recipe from the Joy of Cooking

As long as you cover them in a sealed container they ought to be fine. Some people prefer to refrigerate them any way, just set them out about a half hour before you plan on serving them.

Congratulations, I am getting married in december, and have alerady brought my dress...I pick it up in a month. A lot of people have told me that the entire process can take up to 6 months, especially if you have to order a dress in (ie if you wanted a different size that the store didnt stock) and then make alterations on top which take about 3 months. Dress shops take on average 4 months to order in a bridal gown in if you don't get the exact one on the shelf. I really only started looking this early to get an idea of what styles I like/dont like and the costs I will be up for. But then I came across the dress I fell in love with, with absolutely no doubts at all (11 months in advance) and have now got it on laybuy. If you do come across a dress which is ''the one'' then go for it. But if you are still looking for that perfect dress, don't settle for something this far in advance that you are not entirely happy

This type of pastry freezes quite well, so you can probably make them a month in advance as long as the package you freeze them in is properly sealed.
