I can't believe, I just saw this word for the first time in an article I was reading today, but I'm drawing a blank with regard to where I saw it.

*** update - I saw this in an article in Popular Science I was reading last night. In an article regarding why meat tastes so good (Popular Science, December 2007, "Why Does Meat Taste So Good?" , pg 131-132) it says: "Meat is loaded with molecules called ribonucleotides that react with the amino acid glutamate found in meat (and is also abundant in other food, such as parmesan cheese and tomatoes). This reaction stimulates receptors on your tongue and creates a strong taste known as umami, generally described as "meaty" or "savory," which was discovered by Japanese scientists a centry ago."

Here is a great article on Umami:

Soy sauce and other hydrolysed proteins (fermented proteins?) is an example of umami foods. "Umami" is actually one of our tastes in our collection of taste buds.
