Can I file taxes here in NJ, if i have to stay? Can I still claim head of house hold, for the NC residents, for 2007

You need to file taxes in the state in which you earned money. You can only claim head of house at one place. I suggest you seek an accountant.

Some will depend on how long you've been there - if you were in NC for over half the year and have dependents there who would otherwise qualify you for head of household, then yes you can file as h of h. Even if you've been in NJ for over half the year, as long as NC is still your official home you'd still be OK.

You can file your federal taxes from wherever you are - if you expect to go back to NC reasonably soon, I'd file them with your NC address.

For state, if you only had income in NC just file there, since it sounds like you are still a resident of NC, just visiting in NJ extended though it might be.

The answer depends upon your own facts and circumstances. At this point, it looks like things are still up in the air.

If you are in NJ temporarily you would have to file as a non-resident if you have income in the state. You would still need to file as a resident in NC.

If it turns out you have to remain in NJ, you will need to file as a part-year resident in each state. Again, that assumes you will have income in each state.
