Those weren't just sling shots like Bart Simpson carries. A sling was an acient military weapon. Slingers tried to select smooth stones for two reasons. First, it is easier to estimate the weight of a smooth, round stone. Second, it has less uneven wind resistance. Both considerations improve the accuracy of the throw.

Sharp ones could damage his slingshot, and ricochet off Goliath so the impact would be less. With a smooth stone he was sure of more area being impacted than with a sharp stone.

Slingshots weren't designed for sharp stones.
Not being a scientist, but knows a little bit about wind resistance, a consistant surface would improve accuracy.
