wow. great answers. I'm really impressed. I didn't expect to have soo much info infront of me at once. It's Hard to pick a best answer since almost every makes such great points. OooOooOoo I can't decided.

Horse is commonly eaten in many countries in Europe and Asia. It is a taboo food in English-speaking countries such as the United Kingdom, Ireland, the US, and Australia; it is also taboo amongst the Romany people and in Brazil and India.
Horse meat has a slightly sweet taste reminiscent of a combination of beef and venison. Meat from younger horses tends to be lighter in color while older horses produce richer color and flavor, as with most mammals. Horse meat can be used to replace beef, pork, mutton, and any other meat in virtually any recipe.
In Japanese cuisine, raw horse meat is called sakura (桜) or sakuraniku (桜肉, sakura means cherry blossom, niku means meat) because of its pink colour. It can be served raw as very chewy sashimi in thin slices dipped in soy sauce, often with ginger and onions added. In this case, it is called basashi

Well according to wikipedia it's their value and companionship (sort of like how we don't eat dogs) as well as being seen as a lower class food. And some early western cultures had deities who took the form of horses. As for how it tastes I couldn't say but I would think the meat would be really tough and gamey since horses are so lean and muscular - think of the really cheap cuts of beef like chuck roast, they come from the legs which get the most use when the cow is still alive. Maybe the meat would taste different/better if the horses were specifically raised for consumption and not used as work animals. Anyway take a look at the article, it's really interesting.

begging everyones pardon, but ,after the 2nd ww, all of us who ate meat up until about early 1970's we all probably had a burger with a whinnee behind it ,check-mate your wiki wako-pidia !!

Horse fat is terrible and the meat is tough the fat makes the meat taste bad too that is why they use horses to make glue.

theyre friendly and widely domesticated
like reindeer, reindeer were the first horses ya know..
like present day horses.. some animals , yet large and could fill your tummy - are very gentle sweet creatures
and unless we had to eat, we wouldnt murder that.
