In my experience....and from my previous questions asked on this very subject...
Its usually cos they are starting to really like you
Give them time...go out and do your own thing, dont rely on him for company or a good time and he will bounce back in his own time! : )

This did happen to me. Eventually, I left him. Then, he has come back a few months later and seems more consistent.
The hot and cold thing is very hard on a person psychologically after a while.

If I was dating some1 like that I would break up with them cause I don't need them acting like they like me 1 min and hate me the other.

I would talk to that person and say " If you are going to act like this then we are done". Then I would just concentrat on my self until some one asks me out.

maybe they are not ready to make a committment. are you pushing too hard?
if you want a committment of some type, then ask her what she'd like.. to be an exclusive couple or not?
we dont know what others are thinking til we ask.
