I.e. a sunfower might follow the sun with a near 150o angle, but is it roughly the same angle with any kind of plant?

No. If you think about coexisting species in a rain forest, for example, you will have pioneers, subcanopy trees, canopy trees, and emergents... all of these will have different light requirements and (because of where they are located) different access to light.

Also, species differ in their growth forms and how they branch and present their leaves to the sun, which will affect the angle at which light hits their surfaces.
