my boyfriend is on a chicken and rice for dinner diet with his trainer and i want to make a sauce to go with it. what would be good and how do i make the sauce?

Be careful because lots of sauces contain a lot of fat or extra carbs (probably throwing off what his trainer intended). You might trying cooking up some onions and mushrooms in a little chicken broth. You could also make a healthy salsa type sauce with tomatoes, onions, garlic, etc.

CHICKEN BREASTS IN GREEN PEPPERCORN
SAUCE

Pink and green peppercorns are usually available packed in water or vinegar; white and black will be found dried. The flavor of the chicken and green peppercorns creates an ideal marriage of coloring and taste.
Serves 4.


4 tbsp. butter
3 tbsp. minced onion
1/3 c. dry white wine
1/2 c. heavy cream
2 tsp. green peppercorns, drained & chopped
1 tsp. whole peppercorns, drained
1 tsp. fresh tarragon, or 1/4 tsp. dried Salt

Pound and flatten the chicken breasts. Saute in the butter until nicely browned on both sides. Transfer to a heated platter and keep warm.
Add the onion to the skillet and saute until soft. Add the wine and bring to a boil. Reduce to 2 tablespoons, scraping up any bits on the bottom of the pan. Stir in the heavy cream, peppercorns and tarragon. Continue cooking until reduced and thickened. Remove from heat and correct seasonings. Spoon the sauce over the chicken breasts and serve immediately.

2 lg. green peppers, seeded and cut into strips
2 lg. onions, sliced
2 c. fresh mushrooms, sliced
2 tbsp. oil
Salt and pepper

You could try making a white garlic sauce for it. My favorite chinese restaurant makes it for me (Since I've been going there for about 10 years) and I could put it on ANYTHING. It's one of the only things I would put on vegitables to make them taste good. You could also try making a black bean sauce. These are both healthy, not very fattening, they don't have many calories, and they are delicious. I don't exactly know where to find a recipy... maybe you could search around on the internet.

teriyaki sauce is really good! Make a marinade with store bought teriyaki sauce, add a little soy sauce, and a little brown sugar....put it in a freezer bag with chicken breast and keep it in the fridge for a few hours...yummo!
