Salad With Honey-Lime Dressing

1/2 cup honey
1/2 cup lime juice
pinch nutmeg
1 quart fresh fruit*

*Choose from such fruits as orange segments, pear and apple wedges, melon slices, kiwi slices, red and green grapes, bananas, any type of berries.

In a blender or food processor, combine honey, juice and nutmeg; blend until smooth. Pour over fruit and toss gently.

CITRUS SALAD

2 pink grapefruit, peeled and sectioned
4 oranges, peeled and sectioned
2 papayas, peeled and sliced
1 avocado, peeled and sliced
1 C. fresh berries (strawberries, blueberries or raspberries)
1/2 C. poppy seed dressing
1/3 C. slivered almonds

Combine all fruit in a large bowl, drizzle dressing over top, and toss. Sprinkle with slivered almonds.

In a medium bowl, toss fruit with dressing and chill until ready to serve. Serves 4.

AMBROSIA

6 navel (seedless) oranges
1 pineapple, peeled, cored, and cut into cubes
1-cup coconut (shredded fresh, fresh frozen, or packaged sweetened)
1 large banana
Mini marshmallows (optional)
1 small (4-1/2-ounce) bottle maraschino cherries, drained well

Peel the oranges, taking care to remove all the white pith. Separate the segments over a bowl or storage container so that you catch any juice, and add the segments to the bowl. Add the pineapple and coconut to the orange slices and gently toss. The ambrosia can be refrigerated up to two days, covered.

When ready to serve, slice the banana and toss it with other fruits. (Add marshmallows, if desired.) Add the cherries last. Makes 8 servings.

When you have your favorite fruits sliced and cubed into your serving bowl, add some dried mint leaves. And, consider the addition of coconut.

My favorite sauce for fruit salad is a mixture of Greek yogurt & honey.

(Oh, now I'm hungry!)

I like to take & cut up an assortment of my favorite fruits - you can use any and all of the following: apples, bananas ( sprinkle both with lemon juice to prevent turning), peaches, pears, melon, grapes, etc.......In small bowl, mix together 1 container of your favorite flavored yogurt ( I use peach or strawberry), 1 tablespoon hone7 & 1/2 cup shredded coconut.......Pour over fruit & toss lightly, then chill before serving. Sprinkle with chopped pecans & cinnamon before placing on table......Yummy!

Take your favourite fruits and mix 'em up in a bowl. You can add sugar (or artificial sweetener), whipped cream, chocolate sauce or anything else you like on top of it all.

hope it helps!
