Well from a psychological standpoint, you're telling him that you like him but your emotions are still gaurded. You're not sure whether you want to let him in or not, but you don't want his interest in you to waver either. You're also showing him that you don't want to move too fast, you just want to feel him and the situation out before you make a decision as to what your next move will be.
