I cook dinner very often for my husband, but i am running out of ideas for side dishes. The reason is because my husband is kinna picky and doesnt eat any fruits or veggies, or anything even made with vegetables!!! So that rules out salads too. The only vegetables he eats are potatoes and tomatoes. I've already done french fries, roasted potatoes, mashed potatoes, and stuff like that...Any other ideas of what i can make as side dishes???

Fabulous & Easy Potato Casserole Sidedish:

Ingredients:
2 1/2 lbs hash browns (I use fresh packaged HB found in dairy section of Groc. store-takes 2 packs.)
1/2 lb of shredded cheddar cheese
1/2 cup onions, diced
2 cups heavy cream (whipping)
1 teaspoon salt
pepper

Directions:
1.Preheat oven 350 degrees.

2.Combine all ingredients and stir till well mixed.

3.Butter (or spray with Pam) a large casserole dish.

4.Pour mixture into dish.

5.Cover dish and bake for one hour.

6.Uncover and bake till top is golden brown approximately 20-25 minutes.

7.This dish reheats well either in the microwave or oven.

Potato Side

Ingredients:
5 medium potatoes
8 slices of crispy cooked bacon, broken up
1 cup shredded cheddar cheese
1 teaspoon onion powder
1 teaspoon Butter Buds
2 teaspoons crushed red pepper flakes
2 teaspoons garlic powder
3 teaspoons seasoning salt

Directions:
1.Preheat oven to 350°F.

2.Cut potatoes into 1/2 inch to 3/4 inch cubes.

3.place in large bowl.

4.Add all other ingredients (except the cheese), and mix with a spatula until coated evenly.

5.Place in a casserole dish, cover and bake at 350 for 40-45 minutes (until potatoes are tender).

6.Turn oven off, sprinkle cheese over top, replace cover and let stand in oven for 5 minutes until cheese melts.

7.Serve warm.

Roasted Sweet Potato Side or Main

Ingredients:
4 large sweet potatoes (about 3 lb.)
1 red bell pepper (about 8 oz.)
1 medium red onion
2 tablespoons olive oil
2 tablespoons dried basil
1 tablespoon sea salt
1 1/2 tablespoons garlic powder
1 cup shredded cheese, of choice (optional)

Directions:
1.Peel and chop the sweet potatoes, unless organic.

2.If organic, simply wash well and cut.

3.Cut the pepper and the red onion into a medium dice.

4.In a 11x14-inch roasting pan, put the potatoes, and drizzle with the olive oil.

5.Sprinkle with the basil and sea salt and garlic powder.

6.Toss them in the pan.

7.Bake in the oven at 350F until beginning to soften.

8.Add the bell pepper and onion; stir again.

9.Cook until onion caramelizes and potatoes are tender.

10.Add cheese if desired and turn oven up to 400°F.

11.Cook until cheese browns.

12.Serve as a side or main dish.

When I was in Scotland they made the mashed potatoes with leeks or turnips in the mix and it was really tasty, you can also do garlic and parsley, sun-dried tomato and basil, or how about a tomato and fresh basil salad with a drizzle of olive oil and coarse ground pepper - stuffed baked tomatoes are a great treat too and a sneaky way to incorporate some ground veggies in a bread stuffing (like cooked carrots or celery). You may want to consider introducing some vegetable drinks into his diet for his heart but that is entirely up to you. My DH used to hate veggies but with some small introductions little by little he now can even enjoy a fresh salad - it took time but it was worth it and he feels loads better. Good Luck!

German Potato Pancakes
NGREDIENTS

* 2 eggs
* 2 tablespoons all-purpose flour

DIRECTIONS

1. In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.

Here's a recipe I've used before. Try it if you want some exotic Asian flare: A sweet, succulent and refreshing salad. 1 sweet potato, peeled 1 large mango, skin removed For the dressing: 3 Tbsp olive oil 4 Tbsp fresh mint, chopped Juice of 1 lime 1 tsp grated lime rind 1 Tbsp rice wine vinegar ½ tsp extra-fine sugar Sea salt and pepper, to taste - 1 head Bibb or Boston (round) lettuce ½ cup (10g) fresh mint Preheat the grill or grill pan to medium. Chop both the sweet potato and mango flesh into long wedges, about ¾-in (2cm) wide, ½-in (1 cm) thick. Place in separate dishes. Combine the dressing ingredients in a small bowl and pour half over the mango and potato. With tongs in hand, arrange sweet potato wedges directly over the grill and leave for 6-8 minutes, until grill marks appear and the bottom sides begin to soften. Turn and grill the other side for a further 6 minutes. While the other sides are cooking, arrange the mango wedges directly on the grill. Grill for about 2-3 minutes on each side. Transfer all the wedges to a cutting board and cut into cubes. Place them in a bowl and toss with the remaining dressing. Arrange lettuce leaves on salad plates. Scatter the sweet potato and mango over the lettuce and add a sprinkling of sea salt and finely sliced mint. Serves 4-6.

ITALIAN POTATO TOMATO CASSEROLE

4 potatoes
3 med. tomatoes, sliced
1/2 c. grated cheese
1/2 tsp. salt
1/4 tsp. oregano
2 tbsp. butter
1 tbsp. olive oil
1 onion, sliced thin
1/2 c. Provolone cheese, shredded
1/8 tsp. pepper

Peel and slice potatoes 1/4" thick. Oil large casserole with olive oil. Arrange potatoes, tomatoes and onions in layers. Sprinkle each layer with the cheeses and other seasonings. Repeat, ending with a layer of potatoes sprinkled with cheese. Dot with butter. Bake at 400 degrees for 50 minutes or until potatoes are tender. 4 to 6 servings.

"Potato Puffs"
Makes 4 servings

2 cups leftover Mashed Potatoes
1c. All-Purpose Flour,If using Self-Rising Omit baking powder & salt
2 tsp baking powder
1 tsp salt
1/4 tsp black pepper
2 large eggs,slightly beaten
1 small Onion,chopped Finely
Oil for deep frying

1. Combine all ingredients(except oil),Stir Well.
2.Chill for 1 hour.
3.Drop by 1 tsp full into hot(375*) oil. Fry until golden brown,turning often (like Hush Puppies)to brown evenly.

"Macaroni & Tomatoes"

1/2 -1 lb box(8 ozs.)Elbow Macaroni,cooked
2-cans (14.5) Stewed Tomatoes,juice too
1 small Onion, chopped Finely
2 ribs Celery, chopped Finely(optional)
1 tsp Salt
1/4 tsp black pepper

1.Cook macaroni according to directions on box
Add the 1 tsp of Salt to macaroni water
Don't overcook, it's best to Under cook by a few minutes.Drain Well
3.Place all ingredients in a med sauce pan & heat
over"Low" heat, Covered until tomatoes come to a simmer. Simmer about 8 mins.Stir occasionally
to prevent sticking.
4.Turn off heat and allow pan to sit covered for about 6-7 mins. to allow macaroni to absorb
all the flavors in the tomato juice

Lately I have been making this potato dish that everyone in my family seems to enjoy. I take potatoes (you can use regular or red, both are good), wash them, and cut them into semi-large chunks. I don't skin mine, but if you and your family don't like skins, it's fine to skin. From here I put them in a pot of water and boil them til they are tender. It may sound simple but the fun part is adding seasonings... I add it into the water while it's boiling so it flavors the potatoes from the inside out. I also cut and add carrots, but if your husband isn't fond of them, you might want to think against it.

Some of the seasonings I use are: garlic powder, lemon pepper, salt, black pepper, a dash of hot sauce, smashed garlic (is usually found in jars with garlic juice in it), Tony Chachere's (a cajun seasoning)

Try a marinated tomato, onion & garlic salad - chopped & soaked in garlic italian dressing overnight. Also try fried potato cakes, loaded potato skins & even sneak in some veggies with a good old fashioned sheperd's pie.......He's sure to love it!

my boyfriend is the same way but he doesnt eat tomatoes so basically he deprivs his self of vegies and stuff i asked him what a side dish he would like he said garlic bread pop corn shrimp baked potatoe i dont know i eat everything im pregnnat though lol

I've never tied it before but I think it looks really good, espcially if you love tomatoes.
