Heat a skillet and add 2 tablespoons oil then dice the onion and toss into the heated oil, allow to get "glassy' then add the ground beef and season with salt, pepper, ground cumin or dried oregano, once the meat is browned through add 1 1/2 cups macaroni and lightly toast then add tomato sauce and enough water to over and cook the macaroni - cover with a lid lower heat to med and in about 15minutes you will have a yummy Spanish macaroni dish. Sautee the beef sausage onions and bacon together and drain.if the sausages are whole chop them up first.
Boil collard greens drain and toss in garlic butter
peel and slice potatos very thin
take a cupcake pan and spray with cooking oil
put the thin slices of potato around the edges of the cupcake inlets.
add a layer of the collard greens and a layer of the meat mixture to fill them.
put them in the oven at 350 for about 15 min until the potatos are done.
remove carefully with a spatula.
I guess you can top with sauce if you want to...

Chop up a little of the sausage and brown it with some ground beef and onions. Season it with whatever you like. Make some pasta according to package directions, add the cooked meat and some tomato sauce.

Pasta with red sauce, collard greens on the side.
Red sauce:
brown the sausage and an onion, add tomato sauce and either basil and oregano OR cumin. Let simmer, serve over pasta. Better yet, add the already-cooked pasta to the pot of simmering sauce to 'finish' it.
For the collard greens, brown a little bacon, crumble it, toss the collard greens in the pan with the bacon fat, then add enough water to cover the wilted greens, and simmer for 40 minutes or so. (simmering takes out the bitterness)

The first thing I thought of looking at your list was JAMBALAYA. I don't have an exact recipe for what you have here but you can add and subtract and make it your own!

1 broiler chicken, cut up, about 3 pounds
paprika
3 tablespoons olive oil
1 cup chopped onion
1 cup chopped green bell pepper
2 ribs celery, chopped
2 cloves garlic, minced
1/2 pound smoked sausage, thinly sliced
2 cans (14.5 ounces each) stewed tomatoes
2 cups chicken broth
1 cup long-grain rice
2 teaspoons leaf thyme, crumbled
1 1/2 teaspoons salt, or to taste
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce (Tabasco)
1 pound shrimp, shelled and deveined
PREPARATION:
Wash chicken and pat dry; rub with the paprika. Heat olive oil in a large skillet; add chicken and brown on all sides. Remove chicken from skillet. Add onion, green bell pepper, celery, and garlic. Sauté over low heat until onion is tender, about 10 minutes.
Stir in sausage, tomatoes, chicken broth, rice, thyme, salt, pepper, and hot sauce. Add chicken and turn to coat with sauce. Bring to a boil. Reduce heat, cover, and simmer for 30 minute, or until chicken is tender. Stir in shrimp and cook about 3 minutes longer, or just until shrimp turns pink.
Jambalaya recipe serves 6.

you could make smothered potatoes and sausage served over rice, with the collard greens and bacon as a side dish ...or a simple pasta sauce with the beef or sausage in tomato sauce. All simple and quick and easy...
