I'm making shells right now,(waiting for the water to come to a boil for the shells). I'm making half a pan of meat stuffed, and half a pan of cheese stuffed.
1 Box of jumbo pasta shells-shells cooked in salted boiling water until soft, then rinsed in cold water and drained
For the meat stuffing, 1.5 pounds of ground meatloaf mix (beef, pork and veal), a beaten egg, about 1/2 cup fine chop onion, about 1/2 cup fine bread crumbs.
For the cheese stuffing, a 12 ounce carton of riccotta cheese mixed with 1 beaten egg, a tablespoon of fine chopped garlic,a tablespoon of fine chopped parsley and about a cup of shredded mozzerella cheese, and a few tablespoons of grated parmesan cheese.
After the shells are stuffed and in a 13X9 casserole pan, cover with two jars of prepared spaghetti sauce.
Top with more shredded mozzerella cheese and bake for 1 hour in a 350 oven.Gotta run now-

The filling I've used for years is a spinach filling.
1 16 oz. tub of ricotta
1 pkg. frozen spinach, thawed and squeezed to drain
2 eggs
A handful of shredded mozzarella
A handful of shredded Parmesan-Roman-Asiago blend
As much garlic as you like
Big pinches of salt, pepper, dried basil and oregano
Mix it all up, stuff into the boiled shells. Put some sauce in the bottom of the baking dish, put the shells in, cover with sauce, more mozz and Parm blend, dot with sliced black olives, and bake at 350F for about half an hour.
