They make tiny "airplane" bottles of white wine that I've used when I didn't want a whole bottle. White wine, in my opinion, adds a bizarre flavor to foods that I really don't like. When a recipe calls for it, I substitute vegetable broth (chicken would also work). This can be done unless the white wine is an essential ingredient, such as in in white wine sauce. Otherwise, it's just a minimal flavoring.

Non-alcoholic wine, chicken broth or stock, diluted white wine vinegar or cider vinegar, white grape juice diluted with white wine vinegar, ginger ale, canned mushroom liquid, water. For marinades, substitute 1/4 cup vinegar plus 1 Tbsp sugar plus 1/4 cup water.

this is one place where I would seriously recommend that 2 buck chuck stuff from trader joe's. If I am out of wine, i usually just use chicken broth.

It's a lousy substitute but "cooking wine" can be used. If you have to buy all the other groceries to make something - 5- dollars for a bottle of real wine is not very much $. It is much better than crap cooking wine which is worthless.

You can replace white wine wine by a few drops of lemonjuice.
But if you want to make a madeira - souce --- sorry, you have to pay.

You can substitute chicken broth or beef broth for the white wine.
