This one uses marshmallow creme instead of mini- marshmallows but it does use chocolate chips. If you don't want to - or can't use alcohol in this recipe, substitute 2 teaspoons of pure vanilla extract for the Irish Creme.
Irish Crème Fudge
I also use other liqueurs in place of the Irish Creme such as Kahlua, bandy, Kirsch, spiced/flavored rum and the new flavors of Kahlua mixing and matching nuts, coconut and dried fruits to match the liqueurs.
3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) or 1 shot Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray
In a heavy 3 quart sauce pan - I prefer an enameled cast iron -melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.
Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.
Pour mixture into pans and cool thoroughly before cutting into squares and serving.

Kraft Fantasy Fudge
3 cups sugar
3/4 cup margarine
1 can (5 oz.) evaporated milk
1 pkg. (12 oz.) semisweet chocolate pieces
1 jar (7 oz.) marshmallow creme
1 cup chopped nuts
1 tsp. vanilla
Combine sugar, margarine and milk in heavy 2 to 3-quart saucepan. Bring
to a full rolling boil, stirring constantly. Continue boiling 5 minutes
over medium heat or until candy thermometer reaches 234° F., stirring
constantly to prevent scorching. Remove from heat.
Stir in chocolate pieces until melted. Add marshmallow creme, nuts and
vanilla. Beat until well blended. Pour into a greased 13-by-9-inch pan.
Cool at room temperature. Cut into squares.
Makes 3 pounds.

NEVER FAIL FUDGE:
2 cups granulated sugar
1/4 cup butter
16 lg. marshmallows
3/4 cup evaporated milk
1/4 tsp salt
1 cup chipits
1 tsp vanilla
nuts/cherries etc.
Mix first 5 ingredients in a 2 quart pan
Cook stirring constantly over medium heat to a boil.
Boil and stir for exactly 5 minutes more.
Take off heat and stir in chipits till melted.
Add vanilla and nuts or cherries if using them.
Spread in a buttered 8x8 pan.
Cool in frig and cut into squares.
Can use choc. chipits,milk choc chipits,peanut butter chipits etc.
To make white fudge,use white choc wafers.
White choc fudge with maraschino cherries,is wonderful. Drain the cherries very well before using and blot with paper towelling before adding to fudge.

This is my favorite fudge.
one bag semi sweet chocolate chips
1 can sweetened condensed milk
1 tsp vanilla
chopped nuts (optional)
put the chips and sweetened condensed milk in a micowave safe bowl. Microwave until chips are melted, remove from oven, stir in vanilla and nuts. Spread in buttered pan and refrigerate until hard. It is smooth and wonderful, nice and rich.
