Queen Pudding - 1894 Style
From a 19th century recipe for queen pudding
INGREDIENTS:
1 pint bread crumbs
1 quart milk
1 cup sugar
4 eggs, separated
1 lemon
butter the size of a hen's egg
1 cup sugar
PREPARATION:
One pint of bread crumbs, one quart of milk, one cup of sugar, the yolks of four eggs, the grated rind of one lemon, and a piece of butter the size of a hen's egg. Bake like a custard. When done, cover with the whites of the eggs, beaten to a stiff froth with one cup of sugar and the juice of the lemon.
Put back in oven, and brown lightly

louisese you forgot to lattice the meringue then when baked to a golden brown add raspberry jam and apricot jam in alternative squares in the spaces.
