Because of what Mary and Jesus symbolize.
Mary was a virgin, symbolizing the purity of the heart!
Mary Magdalene, through Jesus, became pure in heart.
"Mary called Magdalene, out of whom went seven devils." Luke 8:2 (seven negative and destructive energies of the heart).
"When a man speaketh fair believe him not, for there are seven abominations in his heart." Proverbs 26:25
"For out of the heart proceed evil thoughts, murders, adulteries, fornications, thefts, false witness, blasphemies:" Matter 15:19 (seven impurities of the heart)
The children of Israel had to drive the seven inhabitants out of the promised land... Joshua 3:10.
It is a pure heart that conceives of, and bears, truth.
Jesus symbolizes Truth.
David, meaning "to love" symbolizes the Spirit.
Truth is the fruit of Love (i.e., son of David).
God is Love.
Jesus, the son of God.
There can be no love without truth, an no truth without love!
These are the "two witnesses" of the heart!

She was chosen when she was conceived without original sin.
"And why does the bible say Jesus is the son of David, if he is the son of god?"
It was prophesied that Jesus would be born in the line of King David. He received His humanity from the blessed mother and the linage of King David. He explained His divinity when He said "I am".
"The lord god will give him the throne of his father David"
Yes by creating a new covenant with mankind.

Mary was chosen as the bearer of Jesus because she told God that she would always follow according to His will and she made sure to pray and talk with God everyday. Not to sure why it is said that Jesus' father wold be David, though. Perhaps that is because David was a very righteous person who loved God as much as Mary did, and so God chose David as the person to be like a second father to Christ. Good questions!

There are many levels of understanding of all Holy Scripture. If you understand something when you read a passage and think that your understanding is complete, then you close the door on what deeper meaning(s) may be hidden from you that are within that passage.
God chose Mary because she was a suitable vessel.
The writer of Luke is familiar with the oral tradition taught by the 12 priest in the temple during the time of the Christ. The esoteric understanding of this passage has to do with the literal historic events and lineage that lead up to the birth of Jesus.
The exoteric understanding is strongly tied to the Jewish oral tradition. The reference to Jacob relates to an indwelling light (Tif 'eret or Rahamim) which corresponds to compassion, mercy and harmony. The reference to King David ties in closely with the light of our outward reality (Malkhut / Shekhinak). Thus the throne of King David alludes to presence in and dominion over creation (or our reality), together with the assembly of Israel (the righteous) and the apple orchard (duality of things).
There may be other deeper meanings as well!
These are all concepts designed to take our consciousness to the state of the realization of God consciousness (the indwelling Christ / Krishna consciousness / the Buddha / the Brahman / 10 sefirot) or what ever name used by Holy text to point to the realization of the divine love of God that radiates within us and all things. The state where we can reveal the ultimate good, the Kingdom of Heaven.
An orthodox Rabbi familiar with the Zohar (oral tradition) may help shed light on this passage.

Last question first. Jesus was born into the genealogical line of King David. Follow the genealogies in Matthew and Luke.
Why Mary? She was in that line, and it was the fulness of the time that the Savior should be born.
God's timing is ALWAYS perfect.
Consider also, the faith Mary and Joseph had, how they followed God. They were righteous people. No better family, no better time, and no better place.
When you examine the prophecies that surround the Savior and His birth, it is all too perfect to have been mere chance. It's just more proof that Jesus was the Messiah that had been promised.
