Corned beef hash and poached egg

Serves 1



Preparation time less than 30 mins

Cooking time less than 10 mins







Ingredients
1 tbsp olive oil
1 onion, peeled and sliced
½ can corned beef
½ can baked beans, rinsed under water
pinch of chilli powder
a few drops of white wine vinegar
1 egg



Method
1. Heat the oil in a medium-large non-stick frying pan. Sauté the onion for 2-3 minutes to soften. Add the corned beef and beans and stir in the chilli powder. Press down in the pan and cook for 45 seconds to a minute on each side, or, if preferred, until crisp and golden.
2. Bring a large pan of water to the boil and add the vinegar. Stir the water to create a mini whirlpool and then carefully crack the egg in. Cook for two minutes and then remove with a slotted spoon.
3. Transfer the corned beef hash to a serving plate and top with the poached egg. Serve at once.
