I would make a crust by mixing it and cold butter together, bake the crust and make an apple or peach pie, or even cheesecake with the crust. Martha stewart or paula dean should have some good dessert recipes that would be improved with a gingerbread crust.

Heyah i don't really know how many several is but anyway you could make a cheese cake topping or a chees cake bottom, You could also make a ermm (running out of ideas!) a desert of chocolate gingerbread moose with crumbs mixed into the mixtur and/or sprinkled on top!!! Yummy

First, grind your cookies into a powder.
Now, find and bake a ham.
About half an hour before it's done, take your cookie powder and mix it with honey until it all sticks together. Remove the ham and put the cookie-honey paste on the ham. Spritz all over with Kentucky Bourbon and put back in the oven.
30-40 minutes later you will have the best ham glaze you've ever tasted.

These are all great answers. Next year, make the cookie dough ahead of time to save time. I usually like to make my dough in November. I freeze it. Most cookie dough freezes very well. Just make sure to wrap them in logs and double wrap with a ziplock bag and label the dough. For your left overs this years, use them for pie crusts as suggested or when making gift baskets, add some cookies. Its a nice touch. One thing, I can also suggest is to get tissue paper, wrap them and add a festive bow and attach them to your gifts this year. Its not corny, its a delicate touch. Just make sure your cookies are not stale from the get go. Thats not a pleasant gift for anyone to get. All the best. Happy baking.
