God had to give Adam and Eve a choice. Without free will to choose, Adam and Eve would have been mere puppets. True love always requires choice. God created man after His image and God, being self-determinate, created man also self-determinate, giving to man a free will. One of the most awesome things that you have is the power of choice. You can choose your own destiny.
This is somewhat speculative, but I believe that we believers will lose our knowledge of evil in heaven. Isaiah 25:85 says that God will wipe all the tears from us and our reproach will be removed (see also Revelation 7:17 and 21:4). We will be able to experience and enjoy God directly without influence or knowledge of sin and evil.

It was not fruits but a paticular fruit. The Fruit of Knowledge on the Tree of Life. God gave Adam and Eve the gift of immortality, to live forever in paradise in all of his glory. God told Adam and Eve not to eat from the tree of life because of the consequences it would have on them and the possible future they would have to endure. The serpent new that and probably saw the sins man was capable of within Adam and Eve. The apple was eaten and Gods rule was broken. See eating the forbidden fruit took away there immortality. Breaking the rule got them kicked out of paradise and into the wasteland where they had to fend for themselves and eventually die. That is why God prevented Adam and Eve from eating the fruit. God however still loved Adam and Eve so much he gave them the ability to create life now that there life was limited, so there legacy could live on.

God set what is good and what is evil. Being good is not to eat the fruit and being evil is to eat the fruit. And if Eve did not eat the fruit, she will forever become a slave of God, an animal that follow him obediently. But as Eve ate the fruit, she attain the ultimate knowledge, of good in evil and evil in good, of truth in lie and a lie in truth, and she also learn fear of inconsistency and lawlessness. However, this knowledge is what makes god a god. And I believe that God fear that humans will overthrow God from his kingdom.

He makes His reasons perfectly clear when He say "And the LORD God said, "The man has now become like one of us, knowing good and evil. He must not be allowed to reach out his hand and take also from the tree of life and eat, and live forever." Genesis 3:22
Humans have the ability to become immortal and much like a god if they eat from those two trees. God is afraid of what will happen if His creations (the humans) are no longer under His control.

More like why did he put the tree in the garden to begin with? If you wanted blind obedience you wouldn't give your creations the ability to disobey.
