Mozzarella cheese is used for pizza because of the way it melts in a uniform manner - plus it tastes so good and it is so nice and gooey.

In america, mozarella was the cheese of choice.
It is only recently pizza shops have experimented with mixing cheddar in for extra flavor in speciality pizzas.
In Germany they use Edam cheese instead, as mozarella cheese is used more in the salat of tomatoe/mozarella slices with basil/olive oil drizzeled over it. It comes in water packed packages so the balls are not dried out like here.

Probably because it has a "lighter" flavor. If it were cheddar, for example, the flavor would overpower the toppings.

It's stretchy, not too salty, soft and easy to cut.
