I am baking Amaretti cookies tomorrow and the recipe calls for caster sugar. I've been all over and can't find it. What do I do? I heard caster sugar is just very fine sugar, but not confectioners sugar. Can i just grind regular granulated sugar in the food processor??

I need help!

It's aslo called bakers sugar. It comes in a paper box that looks like a milk carton. If you have a Super Target near you they carry it. If you put sugar in the blender it will become powder sugar. You can also just use regular sugar in the recipe.

If you don’t have any castor sugar on hand, you can make your own by grinding granulated sugar for a couple of minutes in a food processor. It is a veryfine sugar which is manufactured in Briton under the Castor name. Because of its fineness, it dissolves more quickly than regular white sugar, and so is especially useful in meringues and cold liquids. It is not as fine as confectioner’s sugar, which has been crushed mechanically.

very finely granulated sugar that was formerly sprinkled from a castor.
A caster is a sprinkler that only lets fine grains of sugar out. You can grind sugar in a pepper mill smallest setting and get fine sugar granules. You can also use a mortar and pestle.

You should be able to find superfine sugar in the grocery store. However, it's never in the big bags. It's usually in smaller boxes.

Good luck - Amaretti are delicious!
