I've had many pet mice through the years & usually keep food in their dish for them to nibble @ will. A couple of our little ones have gotten kinda plump, but I've never seen a mouse compulsively keep eating.
Of course, mice are individuals like anyone else & I suppose occasionally 1 might have an emotional/behavioral issue that could cause it to do this.

I have pet rats, but they are similar to mice in many things. 2 of mine are overweight. Almost all animals will only eat what they need. However, caged animals will often overeat and like people, will have health related problems from being overweight.

Some lab mic have been breed to genetically be obese. Some of these may have slipped into the hands of pet mice dealers and pet shops.

Even if a mouse were breed to be obese, it isn't likely to eat itself to death. The mouse may end looking like a golf ball with feet, ears and a tail, but that's all.

Unless the mouse has a severe mental problem, of course!

yes. If you allow the mouse to continue to eat it will. Then it will eventually die

Overfeeding can harm it's digestive system, which can kill it. But the food itself won't kill him. Unless it is bad for him.
