I think we can all agree murder is wrong, but some commandments seem arbitrary. The commandment about the Sabbath or the proscription of pork, for example.
So are these things wrong because they are forbidden by God, or are they forbidden by God because they are wrong?

Perhaps sins are sinful because the sins anger God because God is angry at Himself for creating the sins in the first place.

They displease God because they are sinful. And we are not now, in the Christian Dispensation, under Old Testament Jewish laws, including the Ten Commandments. However all the Ten Commandments were repeated by Christ in New Testament except the one about the Sabbath.

Some of the things that seem arbritrary that you mentioned were sins in the mosaic code, which was just for the Jewish people as a way of showing and remembering that they were a separate people with a relationship to God.
As for what Christians consider sin, it's anything that hurts yourself, hurts others, or interferes with a harmonious relationship with God. Some things may not seem harmful on the surface, or they may be harmful for me but not for you, but the word sin actually means "to miss the mark." God wants us to avoid that which is damaging.

Actually, my view is that they are sinful because they displease those in power.
Pork used to kill farmers before they learned how to preserve. Losing farmers = no food for the wealthy. Losing farmers = bad.
Envy might cause you to want rich people's stuff. Encourage theft and what not. Therefore, Envy bad.
Overworking leads to stress and a young death, the Jews knew that quite well. Sabbath is for resting. Therefore, young death = bad for keeping farmers. See above as to why that's bad.
Murder robs the wealthy of peasants. Therefore, murder bad.
