I'd use about 20 sprigs of fresh thyme.

A "bunch" of fresh thyme usually averages 6 to 10 sprigs from the produce section in the store. For your chicken I'd go with not more than 6 sprigs.

emgees count is probably right. Read all the way through the recipe. My guess is that you will be shoving the whole bunch inside the chicken and using the 20 separate sprigs for garnishing. Though that sounds really weird, because a chicken isn't going to feed 20 people. Nevertheless, a sprig is the individual little branch. And a bunch is a bunch of sprigs. If the store has big bunches - then 2 should cover you. If they only have those little plastic clamshell plastic cases of thyme, you'll need 4 or more - which will be really expensive!

There's no particular/specific count for a bunch.
Depending upon the size of your springs, I'd use anywhere from 5 to 10 (personally I'd use 10), more if you really like thyme.
