Cheesy Salsa Meatloaf
2 lb. ground beef
1-1/2 cups Shredded Cheddar Cheese
1/2 cup plain dry bread crumbs
1/4 cup milk
1/4 cup Thick 'N Chunky Salsa
1 egg, lightly beaten
1 clove garlic, minced
PREHEAT oven to 400°F. Mix all ingredients until well blended.
SHAPE into loaf in 9x5-inch loaf pan.
BAKE 1 hour or until center is no longer pink. Remove from oven. Let stand 3 minutes before removing from pan. Cut into slices to serve.

Cheesy Meatloaf

1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 1/2 cups dry bread crumbs
ground black pepper to taste
3/4 cup water
2 cups shredded mozzarella cheese, divided
DIRECTIONS
Preheat oven to 350 degrees F. In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture. Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

World's Best Meatloaf
Ingredients
1 Tbsp. Onion Onionâ¢
1/2 tsp. Dried Tomato & Garlic Pesto Mix
1/4 tsp. Garlic Garlicâ¢
1/4 tsp. Seasoned Salt
1 1/2 lbs. ground beef
1 egg
1 cup breadcrumbs
1/2 cup half and half
1/4 cup grated Parmesan cheese
Directions
Combine all ingredients in mixing bowl; mix well. Place in refrigerator for 1 hour. For meatloaf, form into loaf; place in loaf pan. Bake at 350° for 50 minutes. For meatballs, form into balls; place on baking sheet. Bake at 350° for 20 minutes. Makes 4-6 servings.

CHEESEBURGER MEATLOAF
2 lb. ground beef
3/4 C. fresh bread crumbs
1/2 C. minced onion
2 eggs - beaten
1-1/2 tsp. salt
1-1/2 tsp. ground black pepper
3 C. shredded cheddar cheese
Preheat oven to 350 F. In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4-inch border around the edges. Roll up jelly roll fashion to enclose the filling. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish. Bake in the preheated oven 1 hour. Makes 8 Servings.
Variations:
1.) Use American cheese with ketchup and mustard on top served with dill pickle chips.
2.) Use Swiss cheese and mushroom topping.

It's simple, just add grated tasty cheese to your regular mixture, or, place half your mix in the loaf pan, place enough slices of cheese to come about 1cm from all sides of pan then add remainder of mix, making sure it seals at the sides to prevent cheese from oozing out. Bake as usual.

I make a salsa type meatloaf and it is so good. Makes wonderful sandwiches. I add taco seasoning to it too.

If you have a recipe you like already, just add some cheese to it. Or find a cheese sauce recipe and pour it over when you serve it.
