does anyone have a recommendation for budget software that is simple and will do what i want it to; not what it wants me to do. I almost just want a empty template that i can fill out and it will add and subtract and categorize for me.

have you considered using excel or openoffice calc to make a spreadsheet? you could design it from ground up to be exactly how you want it to be. Alternatively, you could download a template from the microsoft website and either use it as is or modify it to suit your needs.
