For five eggs you need about two to three heaping tablespoons of mayonnaise (use more or less depending on your preference) and about 1/2 cup of chopped celery.
I like to add a dash of dry mustard and a dash of paprika, as well as salt and pepper - but they're optional.

Bascially all you really need is mayo. Just mash the eggs and mayo together and mix well. Then you can add whatever you like. Onions, celery, salt and pepper, anything you feel would taste good. As for amounts, start with a little bit of mayo and keep adding a bit at a time until you get the consistency you want, then add other stuff until you get the mixture you want.

Besides the mayo (or Miracle Whip-type dressing), dry mustard and paprika, I also like to add about a quarter teaspoon of sweet cucumber relish per egg.

Or for egg-and-olive salad, instead of the relish, I use chopped green olives, with or without the pimento. For five eggs, I'd use two or three tablespoons of chopped olives, but in this type of cooking, everything should be made "to taste."

I chop the eggs with a pastry cutter. Then I make a mixture of Salad Dressing, sweet pickle relish, salt, pepper, prepared mustard (just enough to give it a little color) and after it is mixed - taste it. Then to thin it down a little, add sweet pickle juice. Add to the eggs, folding gently, and spread in your sandwich or serve on a lettuce leaf. Yummmmm

OLD - FASHIONED EGG SALAD

1 head lettuce
6 hard cooked eggs, sliced
1 lg. onion, thinly sliced
1 1/2 tsp. salt
1/4 tsp. pepper
Dash of paprika
1/4 c. salad oil
2 tbsp. vinegar
1 tsp. Worcestershire sauce
1 tbsp. minced parsley
1/4 c. grated sharp cheese

Break lettuce in bite-size pieces. Place lettuce in salad bowl; arrange eggs and onion in alternate layers over lettuce. Combine remaining ingredients; pour over top. Toss lightly. Yield 6 servings.

3. Put your salad in the bowl

4. Take the eggs and put it in the salad bowl
