I usually say "Gesundheit" with a Dutch accent and sometimes I say "Bless you" because as an apathetic atheist I don't really care about the game of Political Correctness.
"There are different theories regarding the origin of this phrase. One idea is that the expression stems from the Middle Ages when the Bubonic Plague was threatening European health. In this case the person saying gesundheit was actually wishing good health upon themselves, since they may have been infected by the one who sneezed."
and
"Superstitions date back as early as Ancient Greece (ref. Herodotus, History 440 BC). The soul was thought to leave the body through the nose upon death, so a powerful sneeze was thus considered an ominous event."

No, we still say bless you. At least I do. I think it's lost its religious value. Most people don't even know that it was based on the Pagan belief that a sneeze drove small evil creatures from the body. And most Christians don't believe in possession.

I am an atheist and I say "bless you". When people were dying of the black plague, one of the signs of infection was sneezing. People said "bless you" to those who sneezed because if you were sneezing, chances are, you had the plague and were dying. So saying "bless you" was more akin to saying "I'm so sorry you're dying, stay the heck away from me though"...

I say bless you, mainly because it's a pavlovian response. However, it's not a religious thing to me, it's a polite response to a sneeze.

My, my, my ...
Why do you assume that in each country a common thing to say is ''Bless you''?
English is not my native language. Roughly translated, that phrase in my language would go something like ''Health upon you''

I say EEEEW.
Actually, I say "Bless you" as well. And surely you didn't think that that was just a Christian saying. After all, I can name at least three other religious groups that say it as well.

I don't say anything. If someone has a major sneeze attack, I might ask them if the are OK.

I'm an atheist and I say "Bless you" as well. "Bless you" doesn't have to mean "God bless you," it just means that you wish them good luck in health.
