I got approved and now im waiting for a visa Number.I applied in 2004 but the priority date they are up to is January 2003.Any idea how long more I have to wait? If I turn 21 before I get my visa number will my category change?

How long u have to wait, only God knows. But ur category wont change, since u have already applied for / submitted.

I think you got approval of Petition either I-130 Alien Relative, which requires the Priority Date (PD) shoule be current to file I-485 Resiter to Permanet Residence or Adjsutment of Status. Depends on your catagory of the sponsor, you can check PD on Visa Bulletin at the Department of State.
