What am I doing wrong? The first time I cooked it too long and this time I used a thermo and it still isn't right. Gosh I am about to give up....expensive to say the least!

225 degrees? That doesn't sound long enough. My fudge recipe says to cook it to soft ball stage, which is 236 degrees F, and it sets up every time, once it's cooled.

That's why I still with microwave fudge.

1 box confectioner's sugar
1/2 cup cocoa
1 stick butter
1 teaspoon vanilla
few drops of milk or water

Put the sugar, cocoa, and butter in a large microwave safe bowl. Microwave on medium till the butter is almost completely melted. Meanwhile, butter an 8x8 pan. Take the bowl out of the microwave, stir in the vanilla and enough milk or water to make it just barely mixable. Pour into the prepared pan and chill. You can add chopped nuts or fruits with the vanilla if you like.

Don't bother with all that nonsense! use the recipie i do:
2 cups chocolate chips
1 cups butterscotch chips
1 small can condensed milk (eagle brand stuff)
tsp vanilla (of course)
mix and melt together till smooth. add walnuts if you want!
pour into a pan, refrigerate 1/2 an hour!!
This is the BEST fudge you will ever eat!!

Here is my recipe for fudge and it has never failed me. I know what it is like to make recipes and they not turn out. You think...such a waste of money., Try this one, I promise you won't fail. . .

Fantasy Fudge

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
12 oz package semi sweet choc. morsels
7 oz. jar marshmallow creme
1 cup chopped pecans
1 tsp vanilla

Combine sugar, margarine and milk in a heavy saucepan. Bring to a boil, stirring contantly. Continue to boil over medium heat for 5 minutes, continue to stir so it won't scorch. Remove from heat, stir in morsels until melted. Stir in the marshmallow creme, nuts and vanilla. Beat until well blended. Pour into a buttered 13X9 inch dish. Cool completely and cut into squares.

It takes time to set up usually over night so if you have not done this then you have just not given it enough time to cool and form.
