I have leftover pork tenderloin I need to use up.

I also have a lot of fresh veggies I can use. I was thinking I might make a soup. Any other ideas are welcome, too.

I have onions, zuchinni, grape tomatoes, cabbage, celery, radishes, and carrots.

Would grape tomatoes taste good just tossed into a soup?

Would radishes? Or are those better just left fresh?

What kind of broth/stock/cream base would work best for this soup?

I'd really appreciate any ideas, thanks~

If you have leftover juice or gravy from cooking the pork, this is a great basis for the stock, just add water to it. Everything but the radishes will work in the soup if you are looking for a basic vegetable soup. Throw in some cooked rice or pasta in. As the pork is cooked, the element that you have to cook the longest is the carrots.

An alternate idea is to make a potato soup and add the pork to it. The potato soup will taste wonderful if you add the carrots and onions to it while cooking the potatoes. Boil the potatoes, carrots and onions. Drain and reserve the liquid once the potatoes are tender. Reserve 2 cups of the potato mixture and mash the remaining. Add to the reserved liquid the mashed potatoe mixture, the unmashed mixture, the cubed pork, a cup of milk, a cup of grated cheese, 1/2 teaspoon of allspice, 1 clove of garlic minced, salt and pepper to taste

I make a soup/stew often with my leftover tenderloin. I cube it up toss it in flour and seasonings( if it needs any more seasoning) and then cook it in a lil olive oil. Then add some chopped garlic, onions, carrots and sometimes potatoes sometimes not. I would prolly leave the radishes out and if you wanted more a soup add some chicken broth and the cabbage maybe. I usually make it a lil more like stew or hash and add some chicken broth and the flour from where I tossed the meat to begin with thickens it up. .. Should be delicious:)

pork tenderloin, onion, celery, carrots, zuccinni, if you have potatos, in vegtable broth, i'd leave out the tomatos unless u want to make a tomato based soup then u can crush the tomatos in it, never seen a radish in a soup before, but hey i've done crazier things in recipies

I don't think the grape tomatoes or radishes would be very good tossed in with the cooking. Add it at the very end
Use chicken stock, some cornstarch or flour and of course a bay leaf and it should be really good!

I would use pork stock...leave out the radishes, and the tomatoes as the skins will fall off and roll up and be inedible! Everything else sounds good though. My stomach is growling...when will it be done? I'll be right over! LOL

i wouldn't add whole tomatoes of any kind to a soup. use some crushed cumin seed with the diced onions and carrots...black pepper, salt and bay leaves...dont make it a cream base...find a beef broth...a lttle garlic too...chop the meat and boil before adding to broth...maybe some peas too...and the celery....stew it

I would leave out the radishes. Soup sounds really good! Maybe try cream of mushroom or cream of chicken.

Try goggling soup ideas.

I'm sure it will turn out great!

Try a cream base, and add in the veggies chopped up fine, but not in a paste, add some cheese to the top and melt it try serving with a pasta. It'll be awesome.
