If it's shredded than i will generally be Monterrey jack cheese.
The crumbly mexican cheese are one of these:
asadero, cotija, enchilado, Fresco, oaxaca, and panela.

I know that a large group of the places around here actually use White American. Sounds funny I know....but true.

white cheddar or swiss is also used I believe ... I want to say... and maybe monteray jack ... monteray jack yeah that's probably it
