When broccoli or asparagus is on sale I buy it and use it sauteed with garlic and extra virgin olive oil over whole wheat pasta. Very healthy and inexpensive. Another inexpensive and healthy pasta dish is to take Hot Turkey sausage out of the casing and saute it in evoo with some garlic. Chop it up as you cook it. When it is cooked add a can of Progresso Lentil soup, a can of diced tomatoes and lots of fresh basil. Serve over pasta. Delicious and healthy. And quick!

My standby is stir fry. Just buy the needed ingredients (if all fresh, I would get mushrooms, green pepper, tomatoes for example). I would include fresh pineapple and/or maybe oranges. I don't make a sauce. Chop your vegetables to roughly the same size. Chop your pineapple. Slice your meat into strips (either chicken or beef) and cook quickly. Add some soy sauce (if desired) and remove from pan. Now add in your vegetables and pineapple. Cook on high heat until crisp, then turn down and cover to finish cooking to crisp tender. Add your meat back in. After everything is heated, you are ready to serve. Serve over rice if desired.
Yes, you can use soy sauce, but due to the salt, my Dad can't have it.

A slow cooker/crock-pot can be your best friend. You can buy cheaper cuts of meat and have them taste wonderful. A slow cooker basically braises the meat, tenderizing it.

Also, pasta is a great way to eat cheap. With only a few ingredients you can eat for less than the cost of a fast food meal. If you use thicker shaped pastas the dish keeps better for lunch the next day. You can shop of ingredients on sale and combine them for great sauces (forget the idea that a pasta sauce has to have tomatoes). One of our favorite cheap meals is pasta, butter, and parmesan cheese.
Play with this recipe based upon what you already have, using dried herbs and leaving out or substituting others.
Spaghetti with Garlic and Fresh Herbs
Ingredients
1 pound spaghetti
3/4 cup extra-virgin olive oil
2 garlic cloves, finely chopped
2 Tbs parsley, finely chopped
3/4 tsp fresh rosemary, finely chopped
3/4 tsp fresh thyme, finely chopped
salt
black pepper, freshly ground
1 tsp fresh basil, shredded
2 Tbs dried bread crumbs
Directions
Boil the water for the pasta.
Put the olive oil and garlic in a large skillet over a medium-high heat and cook until the garlic just begins to change color.
Stir in the parsley, rosemary, thyme, salt, and pepper. After a minute remove from the heat.
When the past is cooked al dente, drain it and add it to the sauce in the skillet, and return the skillet to a low heat.
Add the basil to the skillet and toss until the pasta is well coated with the sauce.
Sprinkle the bread crumbs over the pasta, toss and serve.

Don't be so set against canned or frozen. Canned and frozen veggies are often healthier than fresh- fresh veggies, unless JUST cut, lose most of their nutrients before you get them home and cooked. Canned and frozen veggies are cut and packaged at their peak. As long as you buy low sodium and/or rinse canned items, you'll be getting healthier foods if you get canned. Fresh fruits lose their nutrients, too, but not as quickly. But you're still better off buying frozen unsweetened fruit at times, such as when a certain fruit is not in season.

You need to get a book on hamburger recipes. I have it and it has a hundred way to eat hamburger. Doesn't get much cheaper than that and also very healthy. The book is by "Company's Coming" and Wal Mart should have it. Good luck to you.
